Cooking Club Week 3

The children had decided that this week we would make tacos. They had originally wanted to make lasagna but we discussed what we would need to do to make lasagna and the children came to realize that one hour wouldn't give us enough time. Instead they brain stormed and came up with tacos and pizza bagels, so this week...tacos all the way! Before we begin, we always wash our hands and the fruit and vegetables that we'll be working with. Then we talk about our rules and expectations, the food we'll be working with and what food groups they fall in. Are all of our food groups represented in this activity? Yes!
 
Ground Beef with Homemade Taco Seasoning Mix 
Ingredients
  • 2 teaspoons dried minced onion
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon dried minced garlic
  • 1/4 teaspoon dried oregano
  • 1 pound ground beef
  • 1/2 cup water
Directions
  1. Mix minced onion, salt, chili powder, cornstarch, cumin, red pepper flakes, cayenne pepper, dried minced garlic, and oregano in a bowl.
  2. Heat a large skillet over medium-high heat. Crumble ground beef into the hot skillet. Cook and stir until the beef is completely browned, 7 to 10 minutes. Drain and discard any excess grease.
  3. Return ground beef to heat. Pour seasoning mixture and water over the beef; stir to combine. Bring to a simmer and cook until the moisture absorbs into the meat, about 5 minutes.
We also had tomatoes, lettuce and whole wheat tortilla shells (hard and soft), sour cream and salsa. The children were able to have at least two tacos each. A few children decided to make taco salad by cracking the shells and mixing in the tomatoes and vegetables. Delicious!
